  1. 1 Couscous has become an international word known by so many people all over the globe. It is pronounced (KUSKUS).It is , in fact, a traditional Moroccan food .it dates back to the 13th century when the Arabs were occupying the Andalusia ,which is historically speaking , is the south of Spain now.
    Now you can find couscous in North Africa and even in Europe and USA. It is served in many restaurants around the world.
    Couscous is served cold or hot with meat, chicken and stew vegetables. Some areas in Morocco serve it with some kind of fish. It is served as a principal dish not a side one.
  2. 2 The process of making couscous is intensive. It is made of Semolina which sprinkled with water and rolled with the hands and some dry floor.
    Now we can find “couscous easy-made” in all the super markets but the beauty of this dish is to make it with your hands not to buy it ready to be warmed and served with vegetables.
    To make it , it is easy because it depends on what you want to put as vegetables , kind of meat, chicken or fish. But before let us have an idea about the ingredients.
  3. 3 Ingredients:
    • 1 red onion, cut in half and thinly sliced
    • 1 red, green, or yellow bell pepper, cut into 1″ pieces
    • 2 zucchinis, halved lengthwise and cut into 3/4 inch pieces
    • 1/2 cup golden raisins
    • 1 1/2 cups couscous
    • 1 1/4 teaspoons ground cumin
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cloves
    • 1/2 teaspoon ground cardamom
    • 1/4 teaspoon ground coriander
    • 1/4 teaspoon ground allspice
    • 1 tablespoon olive oil
    • Meat /Chicken ( I prefer beef meat)

    Directions:
    1. Place a large, heavy bottomed pot over medium heat. Stir in all spices and gently toast until fragrant, about 2 to 3 minutes.
    2. Stir in oil and onion, cook until softened. Stir in the bell pepper, and zucchini; cook for 5 minutes. Stir in the raisins, salt
    3. Pour in the meat and orange juice; turn heat to high and bring to a boil.
    4. Once the mixture is boiling, stir in the couscous and remove from heat; cover, and let stand 5 minutes. Fluff with a fork, and serve it in a big dish
    5. Use a spoon to eat.
